Shortbread Cookies
Makes 48 delicious shortbread cookies that last for ever.

Ingredients:

cupButter
cupSuper Fine Sugar
teaspoonVanilla extract
3 ⅓
cupAll Purpose Flour
cupRice Flour
teaspoonsalt


Directions:

1. mix together all of the ingredients until the dough just comes together. Preheat the oven to 325
2. turn out the dough onto a lightly floured surface and knead a little until it is smooth and well blended
3. Roll out to an even 5 mm(1/4inch) tick and cut into shapes. To get even dough, use thin pieces of wood the thickness of the dough and place them on either side of the dough pile so the rolling pin rides along the wood to make an even smooth layer
4. using a cookie cutter, cut out sections of the dough and place on a pammed or cookie sheeted pan. repeat until the dough has no more spaces, and then reform the dough and roll it out and repeat the process until the pan is covered.
5. Cook the cookies in the oven at 325 for 15-20 minutes, just enough for the cookies to begin to turn golden. the shortbread must be cooked but should remain pale. remove the cookies after a 2 minute rest on the pan and let them cool before serving
